When Tom Clark and Antoine Nétien opened Coutume on rue de Babylone in 2011 — a real La Marzocco bar, V60 and Chemex on the menu, beans roasted in-house — they effectively launched Paris's specialty-coffee era. The flagship still anchors the 7e between Sèvres-Babylone and Saint-François-Xavier; baristas grind to your method, the brunch is generous, and Coutume now supplies 60+ Paris bars and hotels with beans. Yes there are subsequent shops, but the Babylone original is the one that matters historically. For a visitor used to Istanbul's third-wave reference rooms, Coutume is the equivalent origin point.
