Hugues Pouget was Guy Savoy's pastry chef before he co-founded Hugo & Victor in 2010 and rewrote the chef-led Left Bank patisserie template. In November 2025 he closed the original Raspail address and reopened two streets away on rue du Cherche-Midi under his own name — the same precision with rebalanced sugar, signature spherical fruit cakes, and a viennoiserie programme. The 2003 French Dessert Champion and World Pastry Cup competitor cooks for an audience that knows the difference between technique and trompe-l'oeil. Near the Bon Marché, ten minutes from Saint-Sulpice. The post-shopping boxed-pastry-home stop, and the chef-quality croissant before a 6e gallery morning.

Open since 28 November 2025 — the old Hugo & Victor sphere cakes are back under the new branding. Order the spherical fruit cake and a kouign-amann; the savoury pâté en croûte at lunch is a quiet move.
