Sadaharu Aoki opened his Paris atelier in 1998 and the Vaugirard boutique in 2001, and has been the reference for Japanese-French crossover pastry for two decades. Matcha tarts, yuzu millefeuilles, black-sesame éclairs and hojicha religieuses sit alongside straight-classical Saint-Honoré and Paris-Brest — the technique is Ferrandi-tight, the palate is Tokyo-via-Paris. Member of Relais Desserts since 2007, holder of the Paris City Hall pastry prize. The bamboo-cake (a yuzu-and-matcha entremets) is the signature order. Pickup-only counter; the boutique sits between Saint-Sulpice and Rennes metro, two minutes from the Jardin du Luxembourg's western edge.
The Bambou (yuzu-matcha entremets) and the matcha éclair are the benchmark orders. Saturday before noon for full lineup; weekday afternoons quieter.
