Yann Couvreur trained at Park Hyatt Vendôme and Prince de Galles before opening his first boutique on avenue Parmentier in May 2016. Omnivore's Pâtissier of the Year 2015, holder of Gault&Millau's pastry recognition, he rebuilt the millefeuille (assembled à la minute, vanilla cream, fresh-rolled puff) into a Paris ritual and pushed low-sugar entremets two years before the rest of the city caught up. The fox-and-flame mark is everywhere now but Parmentier is the mother room — small counter, salon de thé seating in back, coffee from a serious supplier. Five minutes from the Canal Saint-Martin's southern locks.
Order the vanilla millefeuille at the counter — it is rolled and assembled on the spot, eat it within 20 minutes. The fox-shaped pastry is the photo, the millefeuille is the order.
