Sébastien Gaudard is the pastry chef French chefs send their friends to: classical, restrained, no Instagram trompe-l'oeil. The salon de thé under the rue des Pyramides arcades faces straight onto the Tuileries gardens and serves the full repertoire — Saint-Honoré, Paris-Brest, mille-feuille, religieuse — with a tea list that takes itself seriously. The Lorraine roots show in the savoury pâtés en croûte and the ramequins fromagers his father made famous. The seated tea room is the move; the boutique opposite the Madeleine is for taking pastries home.
Mid-afternoon weekdays for a window seat. The Saint-Honoré is the benchmark order; the religieuse café is underrated.
