Camille Machet and Victor Vautier opened Early June a few doors from Le Verre Volé as a cave-à-manger built around two ideas: a strict natural-wine list, and a rotating cast of visiting chefs from across the world cooking small-plates dinners. The room is small, airy, and light; reservations are taken only for parties of four and up. The food shifts week to week and chef to chef; the wines are minimum-intervention only. It's one of the most deliberate experiments in the 10e and reads as both a wine bar and a moving target of a kitchen — go without expectations.
First-come for parties of one to three; reservations only for four-plus. Check the chef rotation before going.
