After two decades in Irun, Iñigo Lavado opened this family-run room inside the Hotel Luze atop Mount Igeldo and earned his first Michelin star in the 2026 guide. Belle Époque dining rooms with wide windows frame the sea while two menus run side by side, one honouring his mentor Luis Irizar, the other his own contemporary voice. It is a polished, sea-lit renewal of traditional Basque cooking.
