Paris Sigalas turned a family plot on the Baxedes plain into the island's most internationally garlanded estate, the reference point for serious Santorini Assyrtiko and barrel-aged Nychteri. The tasting room sits in the middle of the vineyard, with tutored flights running into a full multi-course menu degustation paired glass by glass. The Vinsanto, a sun-dried Assyrtiko-Aidani blend, is among Greece's finest dessert wines.
Open roughly April to October with reduced winter hours; book the food-pairing menu well ahead as the room seats only about fifty.
