The model is roughly: come for a glass, stay for two, eat the cheese-and-charcuterie or one of three hot plates. The list is short, well-priced, and rotated weekly. The room itself — concrete, exposed brick, tiled bar — set the visual template that half of East London's wine bars copied. The chapter's natural-wine anchor north of the river.
