Pedro Subijana, a founding father of New Basque cuisine, has held three Michelin stars here since 2007 atop Mount Igeldo. The dining room hangs above the open Atlantic, and the cooking matches the view with precise, poetic plates rooted in technique. A meal here is built around the sea it overlooks.
