Juan Mari and Elena Arzak run the room that has held three Michelin stars since 1989, on the hill where the family has cooked for four generations. The tasting menu pairs deep Basque roots with a laboratory's restless invention, plated like signed objects. It is less a meal than the source text of modern Spanish gastronomy.
