| Laatst beoordeeld: May 2026 L'Abysse is the twelve-seat sushi counter that Yannick Alléno built around master Yasunari Okazaki at the Pavillon Ledoyen. Two Michelin stars in the 2025 guide; ikejime fish from the Atlantic; sake list as the spine of the wine programme. The room is restrained — pale wood counter, Tadashi Kawamata's chopstick installation overhead, a William Coggin ceramic wall — and the experience is paced as a Japanese omakase with French extractions woven in. It's the most disciplined sushi seat in Paris and the calibration of fish work to French haute service is the differentiator.
