Matsuhisa Athens — Nobu Matsuhisa's Athens project, operating under the chef's name rather than the Nobu brand — opened inside the Astir Palace resort in Vouliagmeni in 2002 and has functioned since as the Athens-Riviera fine-dining destination for the international hotel crowd. The menu is the Nobu canon (black cod miso, yellowtail jalapeño, rock shrimp tempura) executed with a Greek-Mediterranean sourcing register, and the dining room opens to a terrace looking over the resort beach. For the Istanbul cosmopolitan reading the Athens chapter through familiar references, Matsuhisa is the structural Nobu parallel — same menu architecture as Nobu Istanbul, different coastline.
