Édouard-Jean Niermans (architect of the Moulin Rouge renovation) gave Brasserie Mollard its 1895 form: water-green and royal-blue mosaics in Briare enamels, beige and brown marble columns, Sarreguemines tile-work depicting the train destinations from neighboring Saint-Lazare station. The room has been a listed historic monument since November 1989. The kitchen runs classical brasserie — plateau de fruits de mer, choucroute, sole meunière — and the room sees a steady flow of station-bound diners and return regulars. For an Istanbul visitor who wants the Belle Époque mosaic interior without the cathedral-tourism crowds of Bouillon Chartier, Mollard is the quieter pick at the same heritage tier.
