Paul Pairet, the three-Michelin chef behind Ultraviolet in Shanghai, opened Nonos at the Hôtel de Crillon in 2023 as his return to Paris. The room replaces the former Brasserie d'Aumont with an Art Deco set by Tristan Auer (white marble tables, rosewood, alcoves), and the menu is built around the French grill: Dover sole crisped on the skin, an onion soup so rich it could pass for a beef-stock reduction, a carving trolley, a flambéed chocolate soufflé. This is fire-cooked classic French at palace level without the tasting-menu commitment.
Sister-room to Bar Les Ambassadeurs, combine an aperitif at the bar with a Nonos table. Ticket lower than the haute-cuisine rooms; service still palace-grade.
