Franck Audoux (ex-Chateaubriand) opened Cravan in 2017 in a 1911 building by Hector Guimard, the architect of the Paris Métro entrances, at 17 rue Jean de la Fontaine in the 16e, and reset what a Paris cocktail bar could be: a radical, restrained drinks list at twelve euros each (Yellow with gin, Suze and Chartreuse; Trocadero with Picon), impeccable finger food (crab taramasalata, lobster rolls, finger sandwiches), no music. Le Fooding lists the bar in its current guide; WWD profiled it. The Saint-Germain second outpost opened in 2023 with three bars, a library and a rooftop kiosk, but the original Auteuil room remains the founding statement.
