Guy Savoy moved his eponymous restaurant into the Monnaie de Paris in 2015, taking six dining rooms on the first floor whose windows look across the Seine to the Louvre. The walls hold contemporary art on loan from François Pinault. The cuisine is classical-modern French at the highest level — the artichoke and black-truffle soup served with brioche feuilletée and a parmesan butter has been on the menu since 1980 and is the dish to order. Two Michelin stars in the 2025 guide (down from three since 2024). Service is precise without being cold; the cheese trolley is a signal-quality moment.
