William Ledeuil trained at La Régalade and Les Bouquinistes, then opened Ze Kitchen Galerie in 2001 on rue des Grands-Augustins, holding one Michelin star since 2008. The cuisine is the most coherent French-Asian work in Paris — galangal, lemongrass, kaffir lime, Thai basil pulled into classical French construction. Bouillon thaï with langoustine; quenelles with green-curry coulis; pavlova kalamansi. The room, designed with jazz musician Daniel Humair, is loft-like with rotating contemporary paintings on loan; the kitchen is glass-walled at the back. Lunch menu €56 is the entry point. A discreet, technical Saint-Germain anchor that has held up for over twenty years.
