Castor Club has run a discreet door on rue Hautefeuille since 2010 — a wood-panelled ground-floor cocktail room hung with old hunting paintings and a basement that turns into a low-ceilinged dance floor on Friday and Saturday after midnight. Founder Thomas Codsi (ex-Experimental group) writes the cocktail card himself; the menu rotates seasonally and reads like a spirit-forward classic-cocktail education with house twists (the Turkish Delight — pisco, Arabian gum, Chartreuse, pistachio, cardamom — is the signature ask). Listed on Le Fooding's bar selection and a 50 Best Discovery regular. Less photographed than the Marais speakeasies, more lived-in. The 6e's serious cocktail address.
Reservations are taken — useful Thursday onwards. Ground-floor room first, basement after midnight on weekends.
