The 2007 Sentier speakeasy that built modern Paris cocktail culture — still no reservations
When the three founders opened ECC on rue Saint-Sauveur in 2007, Paris had no real cocktail bar scene. Two decades later they run a hospitality group spanning London, Ibiza, Venice and Verbier, but the original room is still the most fun: low ceilings, a DJ corner, no reservations, and bartenders who can take the request rather than the menu. The crowd skews fashion industry and Paris-resident anglophones. Drinks are around €16-18, kitchen runs late snacks. The Montorgueil neighbourhood comes alive after midnight on Fridays and Saturdays — ECC stays open until 04:00.
Walk in before 21:00 on weekends; after that it's a queue. Tell the bartender what you usually drink and let them improvise.
