Sherry Butt hides behind a plain façade on rue Beautreillis, a sleepy 4e side street, and opens into two long rooms of studded leather banquettes, oversized mirrors and dim lighting. The bar's identity is whisky — a deep international selection, with cocktails built around it — but the cocktail programme is broader than that, with house-made syrups and a serious approach to spec. American Vogue ranked it among the world's 20 best bars; Time Out and the Paris cocktail community have kept it on rotation for over a decade. Weekend nights run DJs late. Quieter mid-week: arrive at 19:00, take a banquette, work the menu.
