Bisou

Bisou opened on Boulevard du Temple in 2018 with one rule: no menu, no list. You sit, the bartender asks how you feel and what you usually drink, and a custom cocktail comes back built around 100% French, organic, locally sourced ingredients — most of them transformed in-house into syrups, cordials and infusions to keep waste close to zero. The room is soft-lit, nipple-shaped lamps over a marble bar, a bucolic terrace with hanging plants and copper-trimmed tables. Time Out, Le Fooding and Sortiraparis have kept Bisou on rotation since opening; the sustainability angle is real, not branded. Cocktails sit around €13-15 — low for the format.
