Bànôi (the name means grandmother) opened on rue Amelot in 2017 as the modern-Vietnamese answer in the 11e, between Bastille and the Carreau du Temple Marais edge. The signature is fresh spring rolls — seven or eight versions on the menu, vegetarian to salmon — dipped in house sauces; the broader card runs the South-East Asian register with care.
