Maison Rostang has run on rue Rennequin for 45 years as a two-Michelin-star expression of French classicism — pike-perch quenelle with lobster cream, Bresse chicken with salsify and yellow-wine jus, plant-based tasting alongside the meat menu. Michel Rostang handed the kitchen to Nicolas Beaumann (chef since 2008) and partner-restaurateur Stéphane Manigold in 2020; the 2025 Michelin Guide France retains both stars and Gault&Millau still ranks it among the city's classical-school definitive rooms. The dining room was refurbished without losing its art collection. For an Istanbul visitor who wants the two-star traditional Paris (not the avant-garde version), Rostang is the booking.
