Eight seats, marble counter, soft-tatami silence — Sushi B operates at the precision register Istanbul's edomae rooms aspire to. Chef Masayoshi Hanada works alone at the pass, letting fish from Brittany, Normandy and the Mediterranean rest to its peak before slicing nigiri to a temperature you don't argue with. The room sits a cobblestone street off Place Louvois, near the old Bibliothèque Richelieu — diplomats from the nearby ministries, off-duty Michelin inspectors, the occasional Japanese editor in town for Fashion Week. One Michelin star since 2018, held through 2025-26. Reservation is one of Paris's hardest tables under fifteen seats; book three weeks out, arrive on time, leave silent.
