In Aginaga, the riverside hamlet of Usurbil long synonymous with eel fishing on the Oria, this sagardotegia pours its own cider by the txotx method year-round and feeds big tables the classic cider-house run: cod omelette, cod with peppers, a serious charcoal txuleta, cheese with quince and walnuts. The barns seat hundreds and the value is famously generous, making it a working-Basque counterpoint to the coast's polished grills.
Come with a hungry group for the set cider-house menu; the txuleta and the self-pour cider are the whole point.
