Founded in 1942, Casa Vallés is the birthplace of the Gilda, the spear of olive, guindilla pepper and cured anchovy that started Basque pintxo culture. Just outside the Old Town, it remains a working neighbourhood institution with hanging hams, a long counter and a loyal local crowd. You come for the original Gilda and a glass of vermouth.
Order the Gilda where it was invented and a vermouth on tap; it sits in Centro, a short walk south of the Parte Vieja.
