Tucked on a back lane behind the San Telmo museum, this standing-room bar helped invent the modern made-to-order pintxo. There is no counter display: you read the board and order hot, miniature plates cooked behind the bar. The slow-braised veal cheek in red wine and the seared foie are the dishes people cross the city for.
Everything is fired to order, so be ready to elbow in and call your dishes; the carrillera de ternera is the signature.
