A standing-only bar on the Old Town's busiest pintxo street, devoted entirely to hot dishes cooked to order. The ox-cheek braised in red wine collapses under a fork, the crispy pig's ear shatters like glass, and the kuxkurum mushroom risotto has its own cult. No display counter, just a chalkboard and a kitchen working flat out.
The carrillera (ox cheek) and the orejas de cerdo (pig's ears) are the must-orders; come early evening before the crush.
