The Plaza's restored heritage-French dining room — recipes excavated from two-and-a-half centuries of menus.
After Alain Ducasse's departure, the Plaza Athénée's main room was handed to Jean Imbert, who runs a one-Michelin programme built around historic French recipes — some dating two-and-a-half centuries — staged at a marble table d'hôte beneath the original gilded mouldings and chandeliers. The service is choreographed by Denis Courtiade, who has spent more than two decades on the property. The pitch is heritage rather than avant-garde: Parisian langoustines, sea bass in Chambertin, lamb stew, an extravagant 'grand dessert' presented by paired pastry chefs.
