Founded by acclaimed bartenders Tess Posthumus and Timo Janse, this Singel bar sits inside the 1662 Odeon, a national monument with government-protected ceiling paintings, and holds the largest backbar in the Netherlands at 800-plus spirits. The focus is (neo-)classic cocktails and genuine drinks education. Open latest in the city, but serious about the craft.
