Statera — Latin for balance — sits in Özbek's Pınardere on a hilly east-west wind corridor, two kilometres from the Aegean and five from the gulf. Lena and Alihan Haydaroğlu planted the first 30 dönüm in 2010 after two decades in Istanbul, added another 20 in 2017, and built the production hall on calcareous soil that gives the wines their cut. The bottles are Rhône-leaning: Bornova Misketi and Viognier in white, classic GSM (Grenache-Syrah-Mourvèdre) in red, plus a Cabernet-Syrah-Öküzgözü blend that holds the house's argument together. Tastings are reservation-only — five glasses for a measured Aegean afternoon.
