Kokoreç is the test case for a coastal town's late kitchen, and Mertcan is the only one on the peninsula that takes it seriously. The İzmir house opened in 1974 and the Yalıkavak counter has been on Şeyhülislam Ömer Lütfü Caddesi since 2013 — proper lamb intestine on a charcoal döner, cumin-and-pepper to order, half-bread or quarter-bread, midye dolma alongside. No flourishes, no fusion, no tablecloth. The post-Sait Marina drink ends here, not at a hotel breakfast room.
