Saint-Germain & Saint-Sulpice
Eric Trochon's industrial bistronomy on rue de Seine.
Antoine Westermann's Montmartre poultry house — heritage breeds, rotisserie at the top of the hill.
Three-star Antoine Westermann opened Le Coq Rico on rue Lepic in 2012 as a 100% poultry-led 'bistrotisserie' built around French heritage breeds — Bresse, Challans, Coucou de Rennes — roasted whole and carved at the table. Reborn September 2021 as Le Coq & Fils, the kitchen kept the poultry-house identity and added bistronomic side dishes. Gault&Millau continues to list it; Le Figaro writes about it as the most committed single-protein restaurant in Paris. For an Istanbul visitor on the way down from the Sacré-Cœur who wants a real Montmartre dinner — not a tourist crêperie — this is the address.
