| Last reviewed: May 2026 Brach Paris, Evok Collection's transformation of a former postal sorting centre into a 59-room hotel with a Philippe Starck interior, sits between Trocadéro and La Muette and runs its ground-floor restaurant under Adam Bentalha (promoted Group Executive Chef of Evok in 2025). The cuisine is Mediterranean, olive oils from artisan mills, generous and balanced, served in a high-ceilinged room with skylights, leather banquettes and mid-century furniture. Lampoon Magazine and OutThere have written it up as the most considered new luxury opening in the western 16e. For an Istanbul visitor staying in Passy who wants a Starck room without the Costes-circuit decibel level, Brach is the booking.
