Le Syndicat opened in 2014 behind a deliberately scrappy facade plastered in flyers on rue du Faubourg Saint-Denis, with one clear rule: every drink uses French-produced spirits only. Cognac, calvados, marc, eau-de-vie, French gin, French rum from the départements — the bar's self-styled 'Organisation de Défense des Spiritueux Français' has spent a decade arguing for the depth of the local cellar. Inside it's gold-embossed, dim, hip-hop-soundtracked. The menu changes around themes; the average cocktail sits around €15. It has been a World's 50 Best Bars regular since the late 2010s.
