Tomy Gousset was born in Cambodia, trained at Le Meurice, Taillevent and Daniel Boulud in New York, and opened Tomy & Co on rue Surcouf in 2017; the Michelin star arrived in 2019 and has held since. Vegetables come from his own kitchen garden at the Château de Courances south of Paris; the cuisine is a relaxed-modern bistronomy more than haute, with cooked-to-order vegetables driving the plate.
