Stripped of its midday restaurant ring, the Cours Saleya itself is the real thing: a Tuesday-to-Sunday morning market of Riviera produce, olives, herbs, socca and the famous cut-flower stalls under striped awnings, where Niçois cooks actually shop. Mondays bring an antiques market instead. Go early, eat elsewhere.
