Lucas Baur de Campos worked Robuchon's kitchens before opening Brutos in 2017 with partner Ninon Lecomte: an open-fire asador in the 11e where the prime rib, the morcilla and even the vegetables come off the grill. The wine list — a deep cut of natural French and Italian — is part of the cult. The Infatuation, Le Fooding and Paris by Mouth all back the room; Wendy Lyn lists it among Paris essentials. For a visitor used to ocakbaşı done with absolute conviction, Brutos is the Paris translation. There is no comparable Brazilian-leaning fire room in the city.
