Juan Amador moved from Mannheim to Vienna in 2016 and reopened his eponymous restaurant in a converted nineteenth-century vaulted wine cellar in Grinzing — the Heuriger village in the 19. Bezirk on the city's northern hills. The MICHELIN Guide Austria has awarded the room three stars steadily since 2019, making it the city's other three-star anchor alongside Steirereck. The cooking is precision-modern with Spanish, French and Austrian sources read through the same technical vocabulary; the tasting menu runs eight to twelve courses; the wine cellar — under the vaulted ceiling visible from the dining room — runs deep on Wachau and Burgenland with strong Spanish anchors. The Grinzing location means a fifteen-minute taxi from the Innere Stadt; the destination booking matches the destination food.
The second three-star room in the city after Steirereck — they do different things. Steirereck is the modern-Austrian argument; Amador is the precision-modern-European argument with a vaulted Grinzing cellar attached. Book eight to twelve weeks ahead.
