Two Michelin stars inside Palais Coburg — Austria's deepest wine cellar.
Silvio Nickol earned the second Michelin star at Palais Coburg in 2012 and has held two ever since. The Palais itself — the nineteenth-century Coburg-Kohary residence on Coburgbastei, now a 35-suite Relais & Châteaux hotel — holds one of the deepest wine cellars in the world: 60,000 bottles across six vaults, including a vertical Pétrus run from 1934 onward and a Romanée-Conti library that runs decades deep. The cooking is classical-French in technique, Austrian in sourcing, and meticulous in execution; six- and eight-course tasting menus, no a la carte. The room is opulent without being theatrical — chandeliers, brocade chairs, the kind of formal register that Vienna does better than almost any other European city.
The wine pairing is the point — ask for the cellar tour before service if scheduled. The Palais's other restaurant, Clementine, is the all-day brasserie and reads on the same wine list.
