Joji Hattori's Shiki opened on Krugerstraße in 2014 — the violinist-turned-restaurateur runs Vienna's only two-Michelin-star Japanese room. The kitchen splits cleanly: an omakase bar at the back for nine guests, a formal dining room at the front for the kaiseki-format tasting menu. Hattori's sourcing is the argument: bluefin and uni flown from Toyosu twice a week, Austrian-farmed wagyu where it earns the plate, a sake list curated with the same depth as the Burgenland-and-Steiermark wine cellar. Service is unhurried, the room dark and quiet, the cooking technique-first without the cold rigour that the form sometimes lapses into.
The nine-seat omakase counter is the more interesting booking — Hattori works the bar most evenings. Reserve four to six weeks ahead for the counter; the dining room is easier at two-three weeks.
