Wolfgang Zankl-Sertl opened Pramerl & the Wolf in 2014 in a former corner Beisl in the 9. Bezirk — eight tables, an open kitchen visible from every seat, a single tasting menu that changes weekly. One Michelin star plus a Michelin Green Star in the Austria 2026 guide. The cooking is what Vienna's modern register looks like at its most undiluted: heirloom Austrian vegetable varieties, fermentation-led acidity, a kitchen garden the team works themselves. The wine list reads natural and Austrian. The room is loud and warm rather than reverent — bistronomie scale, fine-dining ambition.
Walk-ins almost never work — eight tables sell out. Reserve six weeks ahead. The kitchen has no second seating; the booking is for the full evening.
