Tomy Gousset was born in Cambodia, trained at Le Meurice, Taillevent and Daniel Boulud in New York, and opened Tomy & Co on rue Surcouf in 2017; the Michelin star arrived in 2019 and has held since. Vegetables come from his own kitchen garden at the Château de Courances south of Paris; the cuisine is a relaxed-modern bistronomy more than haute, with cooked-to-order vegetables driving the plate. Tasting from €98 lunch / €140 dinner. The room is the rare thing — a one-star with the looseness of a neighborhood place. GaultMillau Toque current. Two doors down from David Toutain on the same quiet street.
