Pierre Hermé opened his first Paris boutique at 72 rue Bonaparte in 2001 — between Saint-Sulpice and Saint-Germain-des-Prés — after years at Fauchon and Ladurée and a debut shop in Tokyo. He was named World's Best Pastry Chef by The World's 50 Best in 2016. The boutique is small and crystalline; the macaron flavour archive runs to several hundred and is reorganised by season (Ispahan: rose-litchi-raspberry; Mogador: passion fruit-milk chocolate; Infiniment Vanille). Cakes, viennoiserie, chocolates, gift packaging. The other 6e address — Saint-Sulpice — handles overflow on Saturdays; Bonaparte is the original.
