The Bayazhan family's Antep kitchen brought to Konacık in 2021, with a stone-oven katmer line that runs year-round.
Daş Mutfak opened on Seyyit Onbaşı Caddesi in Konacık in March 2021, run by the family behind Gaziantep's long-standing Bayazhan and staffed by Antep cooks the family brought down for the season. The room is wide, with a stone-oven open to the dining floor and a garden terrace under fig trees, and the kitchen runs the full UNESCO-Gaziantep grammar: beyran soup for the early hours, yuvalama and Antep fıstıklı kebap on the lunch card, lahmacun on a thin dough that comes out of the oven in under three minutes. The room serves a complimentary cacıklı Arap köfte, turşu and Antep ezme to every table before the order is taken, the marker that the kitchen is reading the visitor as an Antep guest rather than a Bodrum tourist. Weekends bring the Antep kahvaltısı with hot katmer and milk, and the kitchen runs through the season and the winter both — Konacık's everyday-Bodrum tier rather than the May-to-October summer one.
