Paulo Airaudo reopened this storied address with the blessing of its former owner and earned it a Michelin star for tasting menus that honour traditional Basque cooking. A bar serves tapas made to order at the entrance, while the real event is the six-table dining room below. Grilled carabineros and hake kokotxas anchor a deliberately classic repertoire.
