Alaköy Pastanesi
Alaçatı
The Demirel family's handmade Alaçatı patisserie, a quiet bakery counter the village uses for birthdays it actually means
The original sakızlı muhallebi house, the recipe the rest of the country has spent twenty years trying to copy
İmren is the source of the sakızlı muhallebi that the rest of Türkiye now lists as 'Alaçatı muhallebisi', drop-mastic, fırın sütlaç, kazandibi, the house keşkül, all out of the same Kemalpaşa Caddesi corner where the family has worked the recipe for two generations. The merkez şube is the one to make the trip for; a fırın branch two doors down handles the bakery side and a değirmen branch on Uğur Mumcu the home-grocery line. Open year-round, no airs, the white-tile counter still does most of the talking.
Sakızlı muhallebi at the merkez şube, eaten cold off the marble counter in summer. Ignore the airport and Istanbul branches; the Kemalpaşa No.65 corner is where the recipe still lives.
