Tohru Nakamura — Munich-born, German-Japanese — runs the only three-star room in the city from inside the Schreiberei, the chancery building where the city has kept its written records since 1552. The eight- or ten-course tasting menu reads as a sustained dialogue between European technique and the kaiseki sensibility he learned in Japan: precision, seasonality, and the discipline of letting one ingredient lead. The room seats roughly twenty, lit low against stone walls; service is unhurried, formal without being stiff. Cancellation policy is 450€ per cover within 48 hours, which tells you what kind of booking this is.
Book six to eight weeks ahead. Bar Tatar in the same building is the casual sister — same address, walk-in tartare and natural wines, runs Tue–Fri from 17:00 and Sat from 13:00. If Tohru is sold out, Bar Tatar is the consolation that doesn't feel like one.
