Le Taillevent at 15 rue Lamennais has been running since 1946 and remains the canonical reference for French restaurant service: meat and fish carved tableside from a trolley, crêpes Suzette flambéed first with Grand Marnier and then cognac. The kitchen under Giuliano Sperandio holds two Michelin stars; the wine programme — managed by the Gardinier family, who also own Les Crayères in Reims — won Best Bordeaux Wine List in France 2025. The room itself is wood-panelled, hushed and deliberately conservative; this is what 'Paris classic' actually means before the term gets diluted.
